  • 4 large Portobello mushrooms
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella, diced
  • 2 cloves garlic, minced
  • 2 tablespoons balsamic glaze
  • Fresh basil leaves for garnish
  • Salt and pepper to taste


  1. Preheat your oven to 375°F (190°C).
  2. Remove the stems from the Portobello mushrooms and gently scrape out the gills using a spoon.
  3. In a bowl, mix cherry tomatoes, mozzarella, garlic, salt, and pepper.
  4. Stuff each mushroom with the tomato and mozzarella mixture.
